It’s been raining all weekend due to a typhoon that hit the coast of Oregon and Washington. I live almost two hours from the coast so the wind and rain wasn’t near as bad as other parts of the state. The rain and wind only made me excited to bake, seriously, cold weather just makes me happy to stay home and make yummy food and desserts. I made a really delicious apple crisp yesterday (recipe found here) and right now I can smell the cinnamon pull-a-parts I have baking in the oven.
Some days are better that others, but it is really rough having my husband gone all the time. Since Carter is in school for most of the day now too, I’ve spent a bit more time on myself, which is a rare thing with two kids and a husband that isn’t home from studying until midnight. I’ve been trying out new recipes, reading and blogging more, basically just keeping myself busy and trying to make the best of our situation. We find out in a few weeks where we are moving to and I’m anxious to know where we will be going. For those of you that are new to my blog, the first two years of Medical school is book work here at their main school in Washington State. The last two years we are placed in another state (still in the Pacific Northwest) for clinicals. We will be finding out soon if we are moving to either Alaska, Idaho, Washington, Montana or Oregon. Medical school is crazy stressful and the schedule is demanding but we feel very grateful to be in our current place.
